Buffalo Wing Chopped Salad

Ok, so I love wings. Big whoop. But I don’t just love wings. I love everything that comes WITH them. The spicy sauce. The creamy, tangy blue cheese. The crunch of the carrots and celery.  The contrast between hot and cool…I just love a great plate of wings. The only way that I could improve it would be to make it less messy and easier to eat. Something that might take a lot of mise en place, but that would then come together in a snap. Something that could be as healthy or as delightfully fatty as you wanted. Something like this:

Buffalo Wing Chopped Salad

Ingredients:

1 lb. ground chicken

1/2 cup wing sauce

1 cup blue cheese dressing 

*All vegetables chopped finely*

1 head iceberg lettuce

1 bell pepper

1/2 red onion

1 bunch celery

1 cup shredded carrots

2 tomatoes

1 cucumber

1. Put the chicken in  a skillet, and cook…

until it is totally browned and cooked through. If it gets a little charred in spots, that’s ok, too!

2. Toss the buffalo sauce in there. Put the heat down to medium and let it cook until the chicken has absorbed most of the sauce, and the residual sauce has thickened.

3. Put the vegetables in a bowl, toss in the chicken, and stir to combine everything.

4. Top with blue cheese dressing and serve.

I know, I know… this is so easy it doesn’t really count as a recipe. But if it’s so easy…why haven’t you made it? Why hadn’t I made it before now? All the best parts of buffalo wings with none of the mess or time spent making it. Spicy,juicy chicken, crunchy vegetables, and a swath of rich, piquant blue cheese dressing. Pair it with a baked potato, and dinner is ready.

    I want to put the whole salad in an egg roll wrapper and flash-fry it. That’s not wrong, is it?
