Spicy Lowfat Tartar Sauce and Castello Moments Recipe Roundup

I love a fancy French sauce.

I love a simply prepared fillet of fish.

But there is nothing…NOTHING…better than fish and chips.

I am talking flaky white fish encased in an airy, golden beer batter and thick cut fries with fluffy insides and crunchy outsides.

And though the Brits prefer this with piquant malt vinegar, I am totally American in my dip of choice:

Tartar sauce.

That’s right…creamy, sour, and slightly spicy tartar sauce.

I make mine with nonfat Greek yogurt and mayonnaise which cuts down on the fat without eliminating it completely.

And don’t even THINK of using sweet relish here…do you kiss your mother with that mouth?

Low Fat Spicy Tartar Sauce

pix 019 Ingredients:

2 tsp. dill, chopped

1/2 small Vidalia onion, chopped

1/4 cup mayonnaise

1 tsp. capers

juice of 1/2 lemon

1/4 cup Greek yogurt

1 tsp. dill pickle relish

horseradish to taste

pix 057 Just mix them all up, taste, and keep on tasting. The horseradish provides a peppery bite and the relish has a lot of salt, but feel free to add salt or pepper if you want. The secret here is the equal parts Greek yogurt and mayo. That mixture ensures that the sauce has both tang and buttery richness, with half the fat and all the flavor of standard tartar sauce. The capers add a really savory punch and the horseradish is very important – it adds heat without taking over the taste of the eggy, rich sauce. The dill is the crowning glory – grassy and perfect with seafood.
pix 058 Although, to be honest, I have dipped fries in this. I have used it as a sandwich spread. And it would be dynamite instead of plain mayonnaise in chicken salad.

It’s just one of those sauces that makes me proud to be an American.
